Island Caribe Plantains

Ingredients

I large plantain sliced in small circles
I medium mango cubbed
1 fresh cup of pineapple in chunks
Toothpicks
Confectionary sugar
1 tablespoon of vegetable oil

Recipe

1. Heat the saucepan on medium and then add the oil. Fry the plantains for 3 minutes turning them over as you brown each side evenly.
2. Add the pineapples and mangos to the saucepan.  Heat for an additional 1 minute.

3. Do not burn all of the plantains. Be sure to remove it from the stove once it’s cooked.

4. Take a toothpick and put one cube of mango, then one chunk of pineapple, and last one circle of plantain. Shake some confectioner sugar on it. Serve.
