Island Caribe Plantains
1 large plantain sliced in small circles
1 medium mango cubbed
1 fresh cup of pineapple chunks
1 tablespoon of vegetable oil
1. Heat the saucepan on medium and then add the oil. Fry the plantains for 3 minutes turning them over as you brown each side evenly.
2. Add the pineapples and mangos to the saucepan. Heat for an additional 1 minute.
3. Do not burn the plantains. Be sure to remove it from the stove once it’s cooked.
4. Take a toothpick and put one cube of mango, then one chunk of pineapple, and finally the plantain on the bottom. Shake some confectioner sugar on it. Serve.
