Pineapple Tart Cookies

Serves 6


  • 20 oz. of crushed pineapple
  • ½  cup of light brown sugar
  • ½  tbsp. of vanilla essence
  • ½  tbsp. of cinnamon
  • *Be sure to get the ingredients for the dough from my Coconut Tart recipe.


  1. Put the pineapple, light brown sugar, vanilla essence and cinnamon in a sauce pan and cook on medium for 1 hour then let it cool.
  2. Add the pineapple mixture to the tart that you created from the dough from the Coconut Tart recipe (Mother’s Day episode).
